Unabridged – Black Raven and Stone Collaboration – Release Events

After months of sparse emails, wild ideas and a couple of flights we were able to brew a beer with Stone Brewing‘s small batch manager Steve Gonzales in April of 2014. He and Beaux decided on a Saison style aged in both red and white wine barrels (both French and American oak) with sumo mandarins and acacia chips added in secondary. The result shows each brewer’s affinity for complex, oaked beers utilizing specialty ingredients that stray from the beaten path. To roll out the beer we’ll be hosting releases around the greater Seattle area and the eastside. Unabridged will be available in 500mL bottles and draft. This collaboration was made only once and will be released tomorrow (9/15/14).

How it happened:
“One of Black Raven’s brewers visited Stone Brewing a few years ago and met Steve. The idea of someday collaborating was discussed. In April of 2014, the concept came to life when Steve and Beaux brewed this beer at Black Raven Brewing in Redmond, WA.”

Beer Style:
“I’m not sure it really nails a style. The base is pretty much a saison, fermented with a spicy, phenolic Belgian yeast and then aged in wine barrels (red and white). Sumo Mandarin oranges and acacia chips were added during maturation. I think it really is a celebration of both brewers affinity for barrel flavor contributions and some non-typical brewing ingredients.” – Beaux Bowman

Tasting notes:
“Light pale in color with a balanced malt and hop profile. Swirl your glass for bold aromatics of perfume, citrus fruit and essence of wine barrel. Drinks lightly dry with a touch of soft mouth-feel providing the foundation to carry these bold flavors without becoming overpowering.” ~ Beaux Bowman – Head Brewer/Black Raven Brewing

Tasting notes:
“Some pleasing native funk from the wine barrels and tons of citrus up front on the nose. Specialty malt provides some mouth-feel and silkiness, and there is some mid-palate wine and stone fruit coming through. The finish is huge citrus, along with some spicy phenolic flavors from the Belgian yeast.” ~ Steve Gonzalez – Research Brewer/Stone Brewing

  • ABV: 5.0%
  • IBU: 27
  • Malts: Pilsner, wheat, rye and oats.
  • Hops: Styrian Golding, German Opal, Czech Saaz
